Boil five or six potatoes with one diced medium onion (leftover potatoes would work too. I've used mashed potatoes before)
In another pan, melt 3 T. butter and mix in 5 T. flour
Add 1 C. potato water, 1 C. plain water and 1 1/4 C. milk
Mix thoroughly with a whisk.
Bring to a boil, stirring constantly
Add parsley, salt, pepper to taste. I also added celery salt. You could add celery flakes or fresh celery leaves. You could also add frozen corn and other vegetables. This is a great appetizer.
