Potato Soup Boil five or six potatoes with one diced medium onion (leftover potatoes would work too. I've used mashed potatoes before) In another pan, melt 3 T. butter and mix in 5 T. flour Add 1 C. potato water, 1 C. plain water and 1 1/4 C. milk Mix thoroughly with a whisk. Bring to a boil, stirring constantly Add potatoes Add parsley, salt, pepper to taste. I also added celery salt. You could add celery flakes or fresh celery leaves. You could also add frozen corn and other vegetables. This is a great appetizer.

Potatoe soup is one my favorites- I started w/an Old Mexico recipe and then turned it into a New Mexico recipe- yum- use green chile, the potatoes are boiled in chicken broth, and of course there are bay leafs (lol) I seem to put them in everything I cook except for pies. cakes, and cookies- LOL- I think I will make some today---

I'm definitely going to have to try your version. It sounds yummy! I haven't used bay leaves that often...I'll have to try that too.

I will send the recipe ..I've altered it many times- e.g. adding mushrooms or Italian sausage along w/some curly greens- if your Mom remembers I made it at Nick's baptism event.. Aunt Dona
